    Spiced Nuts

  • 1 tablespoon unsalted butter -- softened
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1 egg white -- slightly beaten
  • 2 tablespoons cold water
  • 3 cups unsalted nuts -- * see note (3 to 4)
  • * (walnuts, almonds, hazelnuts, cashews, pecans, brazil nuts)
  • Preheat oven to 275.
    With brush, spread butter over large baking sheet. combine sugar, salt and spices in a small bowl. Add egg white and water; stir to a smooth paste. With a fork, mix in nuts 1 cup at a time, making sure all are well-coated. Spread evenly onto baking sheet. Bake 45 minutes until crisp and golden. Let cool completely before storing.
